 #月娘酥饼 Golden Moon Pastry

内馅:
(A) 绿豆馅
(B) 金沙咸蛋黄

材料:(绿豆馅)
绿豆片 150克 (去皮)
清水 适量
糖 70克
低筋面粉 15克
无盐牛油 35克
盐 少许

做法:
1)绿豆片洗净(水清澈为止),加入适量清水浸泡最少3小时以上。
2)浸泡好的绿豆片沥干水分,加入干净的水(盖过表面),以大火蒸大概30-40分钟或至豆软烂即可。
4)将蒸熟的绿豆片倒入搅汁机里搅成泥状,倒进不粘锅里,加入糖、面粉和牛油一起煮至浓稠即可。

材料:(金沙咸蛋黄)
新鲜咸蛋黄 5粒
米酒 适量

做法:
~把处理好的咸蛋黄,沾上米酒,铺在烤盘上,以180°c烤7-8分钟或至熟,趁热过筛成沙状即可。
 
月娘酥饼皮:
 
材料:(油皮)
中筋面粉 100克
糖粉 20克
盐 1克
无水奶油 38克
清水 38 克   
 
材料:(油酥)
低筋面粉 90克
无水奶油 45克
 
装饰:黄豆粉/绿豆粉
 
~油皮面团分成:每个21克
~油酥面团分成:每个14克
~绿豆馅分成:每个22克
(我放25g)
~咸蛋黄分成:每个1茶匙
 
~以180°c 烤17 -20分钟(中层)

Fillings:
(A) Mung Bean Paste
(B) Sifted Salted Egg Yolk

Ingredients: (Mung bean filling)
Mung beans 150g (peeled)
Water right amount
Sugar 70g
Low-protein flour 15g
Unsalted butter 35g
Salt right amount

Instructions:
1) Rinse the peeled mung bean (until water is clear), add right amount of water and soak for at least 3 hours.
2) Drain the soaked mung bean, add clean water (cover the surface), and steam over high heat for about 30-40 minutes or until softened.
4) Blend the steamed mung bean into puree, then pour into a non-stick pan, add sugar, flour and butter and cook until thickened.

Ingredients: (Salted Egg Yolk)
Salted egg yolk 5s (fresh)
Rice wine Right amount

Instructions:
~ Sprinkle the cleaned salted egg yolk with rice wine, spread on a baking tray, bake at 180°C for 7-8 minutes or until cooked, sieve it while still hot into a sandy texture.
 
Shortbread Crust:
 
Ingredients: (Oil dough)
Plain flour 100g
Icing sugar 20g 
Salt 1g
Ghee 38g
Water 38g 
 
Ingredients: (Puff pastry)
Low-protein flour 90g 
Ghee 45g
 
Topping: soy / mung bean powder 
 
~ Divide oil dough into 21g each
~ Divide puff pastry dough into 14g each
~ Divide mung bean filling into 22g each
~ Divide salted egg yolk 1tsp each
 
~ Bake at 180°C for 17-20 minutes (middle oven level)
